Salted Coconut Caramel Cups

Ingredients

Filling

  • 1/2 cup tahini

  • 2 cups shredded coconut

  • 1/4 cup cacao butter

  • Liquid stevia to your liking

  • 1 tsp vanilla essence

  • pinch sea salt

Choc Topping

  • 1/2 cup coco oil

  • 2-3 tbs cacao

  • 1 tsp vanilla essence

  • Liquid stevia if you like a little sweetness. For me, the sweetness in the filling is enough tho.

Method

  1. Place tahini and coconut, vanilla, stevia and salt in a food processor or blender. Pulse till completely combined.

  2. Add in the cacao butter (the heat from the nuts and coconut should be enough to melt it). Continue to blend or process until a smooth butter forms.

  3. Pour into silicone moulds and place in the freezer.

  4. Meanwhile make chocolate by combining all ingredients in a food processor or blender.

  5. Top cups w chocolate and place in the fridge to set.

  6. Once set, sprinkle with more sea salt on top.

  7. Store in the fridge.
